Home Roasting Offers Choice, Challenge, Change
Roasting coffee beans at home can be quite an adventure and nothing will ever taste as rich or as fresh as beans roasted minutes before you grind and brew. Although the process can be as simple as tossing some beans in a fry pan or using an elaborate, computerized mini roaster, many factors are involved in roasting the "perfect bean" to satisfy your palate.

That's a nice! Takes a Delicious Coffee Break
Three Sicilian-style coffees from the gourmet Sicilian pasta and sauce line, That's a nice, are now available both in retail stores and online. The coffees debuted this year, earning them the "Best Tasting Coffee" award from the 2008 Winter Fancy Food Show.
These Sicilian-style coffees are not to be confused with Italian dark roasts as they are roasted to a definitive city medium style without the edge of harshness frequently found in overly roasted dark blends. All take well to milk and/or sugar.

BREWING TIPS: Getting a Handle on Hot Coffee Drinks
Any reason is perfect for a delicious hot coffee cocktail, but what's the best way to serve them? Fortunately, the choices are becoming increasingly sophisticated with a nod to cute, clever, and cheap to buy. Take, for instance, the Bon Coffee Cups shown on Crate and Barrel's www.cb2.com web site. These round clear glasses hold a hefty 10.5 ounces of your favorite Spanish Café and you needn't give a care to the temperature because the clever rubber band in spring colors of poppy, aqua, and lime (with more soon to come) protect your fingers and make gripping easy. Just remove them before stacking in the dishwasher, and they're ready for the next event. Did we mention cheap?

Coffee 101
Welcome to Coffee 101: your guide for coffee lingo and tips! Check here for the origin and meaning of some popular coffee vocabulary.
Iced Latte: A latte by definition is strong espresso coffee with a topping of frothed steamed milk. The espresso is made from French or Italian roast beans that have a shiny, dark, oily surface. For a refreshing summertime treat, pour the coffee over ice (using ice cubes made from coffee) then top with frothed steamed milk or soy milk. For an extra special treat, sprinkle either shredded coconut or chocolate shavings!

TREE TO CUP: The Sensuous Sumatra for Serious Sipping
Among the archipelago of islands known as Indonesia is Sumatra which has produced coffee since the Dutch colonizers landed there in the 1600s in ships owned by their East India Trading Company partners. The first plantings were in Aceh near Lau Tawar Lake, the landlocked as part of the Bukit Barisan Mountains known as the Parade of Mountains. Its long coffee harvest (eight months), rich organically nurtured volcanic soil, and right-for-coffee weather produces an arabica coffee with a heady fragrance and rich, full-bodied taste in the cup with low acid smooth highlights.

Who Said That?
Coffee bathes you in luxury. Among the numerous luxuries of the table...coffee may be considered as one of the most valuable. It excites cheerfulness without intoxication; and the pleasing flow of spirits which it occasions...is never followed by sadness, languor or debility. Benjamin Franklin (1706-1790)

Question:
Dear Phil,
Good morning. Any tips on making great iced coffee? We especially love the flavor of McDonalds' new iced coffee drinks.
Donna
Answer:
Dear Donna:
The entire line of McDonald's coffees has been upgraded and millions are "lovin' it" as sales for the coffees, both hot and iced, are soaring for this ubiquitous chain.
You can experiment at home with premium coffee, milk or cream or soy milk, and sugar or artificial sweeteners without the additional preservatives and sweetening agents that the chain uses. As for at-home recipes for iced coffees, there are three generally recognized recipes: hot brew, then cool and chill; hot brew double strength, then cool and chill, or cold-filter brew and serve. Fill ice cube trays with leftover coffees which not only add to the richness of iced coffee but more importantly avoids dilution that ordinary water ice cubes do.
